Finca La Esperanza - Maragogipe Coffee Pack (Two 8oz bags)
These are two of the most interesting coffees we have ever purchased at Fika. They come from our favorite Guatemalan farm, Finca La Esperanza. What makes this offering unique is at least two-fold. First, these are a coffee varietal called Maragogipe, which is known for its large sized seed, high quality but low yield. You should notice it immediately upon opening the bags, these coffee seeds are larger than most!
A second unique aspect to this offering is that the two coffees are actually the same coffee from the same farm, yet in the cup they taste very different. This difference in flavor is due to their processing method, or the method used to remove the bean (actually a seed) from the coffee fruit, or "cherry". In this case, one of these Maragogipe coffees is washed, while the other is natural processed. These are actually two of the most common, if not the most common, processing methods.
When a coffee seed is harvested and immediately washed out of the fruit with all the mucilage being cleaned off the seed with the fruit, this is considered a washed coffee. Whereas the natural processed coffee is allowed to dry in the fruit casing. Because of this, the seeds become infused with some of the sugars from the fruit. With the washed seeds you are tasting principally the seed itself, while with the natural processed coffee you get some of the flavors of the fruit which the seed is from.
